Could you tell me how the check and checkmate moves used to be annotated in the seventeenth century? (1600).

I believe it would be different from our current plus (+) and pound (#) signs.

Old Chess notation were as follows:

+       =   Check, ch.
#       =   Mate, Mates.
0-0     =   Castles K.R.
0-0-0  =   Castles Q.R.
N       =   Kt.
QxB   =   Q. takes B.
